With lentils, Basmati rice and a heap of vegetables, this meal right here will not leave you hungry and will keep you warm throughout the night. The sweet and subtle coconut flavor balances out beautifully the heat from the red curry. We also add a couple tbsp of our house-made roasted cauliflower puree powder to this dish for extra nutrition, deeper flavor and a silky texture you wouldn't believe! It is a staple in our backpacks!
